200g white flour
100g sugar
150g yogurt
2 egg yolks
Pinch of salt


3 Opera® Kaiser pears
100ml red wine
1 teaspoon ground cinnamon
1 tablespoon sugar
2 macaroons

  • On a work surface pour in the flour, sugar, salt, yogurt and the two egg yolks and mix. Knead until the dough is soft; reduce it to ball, sprinkle with flour and let it rest for 30 minutes, meanwhile prepare pears for garnishing.
  • Peel and slice pears and put them in a pot with the wine, sugar and cinnamon. Cook on a low heat, stirring gently from time to time, until reduced to half. Cool. Meanwhile, place a sheet of baking paper in a baking pan. On a floured surface roll the dough into a circular shape Press the dough onto the pan and shape edges. Prick the bottom of the dough with a fork and crumble the two macaroons over it, then pour mixture into pan and bake at 180° C for about 25 minutes.
  • Remove from oven and cool before removing from the pan.
